The Maharashtrian food is mind blowing and tongue licking. The food here is dominated by strong aroma with unique blend of strong masalas accompanied by ginger and garlic but yet simple and healthy. Many vegetables like brinjals, tomatoes, patatoes, ladies finger, cauliflower etc are prepared with spicy masala and seasoned with vegetable oil and cooked tenderly. This brings out the very taste of the vegetables since its cooked in its own juice and thus makes it healthy. And these dishes can be made more healthy by reducing the amount of oil and adding water to it ,yet it would taste the same.
