Ingredients:
500 gms. brinjals healthy, large
5-6 green chillies finely chopped
2” piece ginger, grated
salt to taste
1 tsp. lemon juice
1/4 tsp. turmeric powder
3 tbsp. oil.
Method:
- Prepare a coalfire or a barbeque.
- Put brinjals in them, and roast till they are soft inside.
- If this is not possible, then they can be baked in a foil in oven or stove.
- To be sure that the brinjals are not rotted, a small silt may be made.
- Remove and rub off the skin as much as possible. ( u can first rinse it under water to easy this).
- Mash with a mallet or potato masher.
- It can also be chopped nicely. Or a electric chopper can be used.
- Heat oil in a pan, add chillies, ginger and stir for a minute.
- Add mashed brinjal, turmeric powder, salt mix well and stir and saute for some 4-5 minutes.
- Add lemon juice and stir well.
- Serve hot with bhakris or puris.
Making Time : 45 minutes
Makes : 7-8 servings
Shelf Life : 1 day.
Note : the unique taste of this dish lies in roasting the brinjals in coal fire. Though made any other way, will taste good, it is definitely not the same.
