Indian cookery really needs no introduction. It is famous the world over and enjoys a reputation unmatched. Indian food has an uncanny charm and those who once taste Indian food find that all other food insipd and tasteless in comparison.
It is the spices, whose use dates the pre-aryan period, which are responsible for these superb preparations. It was in face the lure of these spices which first brought the British and the French, the Dutch and the Portuguese to the Indian Coast, the very spices which were the pride of India were responsible for its subjugation. It does not indicate, as those uninitiated to the glories of the Indian food are prone to believe, that Indian food id necessarily acrid and searing. No doubt who revel in taking highly spiced dishes, but there are others who can stand nothing but a bland dish and contrary to popular belief Indian food is just as tasty when it is bland as when it is hot. the extent to which a dish need to be spiced is not rigid. It is matter of personal taste and can be varied accordingly. The art of Indian cookery lies not in high spicing but in the delicacy of spicing. It is the use of selected spices in a particular manner to bring out the dormant flavours of a dish or to drown the undesirable ones which is the real art.
Some of the regional dishes is posted here. They are kept traditional but yet simple , making it easier for anyone to use them.

All About Indian Food:
Like India, Indian cuisine is varied, diverse and distinct. In India, recipes are handed down from mother to daughter, from generation to generation. Although, nowadays it has become easier to find good cookbooks and yes, websites with some great recipes.
Indian cuisine, renowned for its exotic gravies seems complicated for any newcomer. So anyone setting out to cook Indian food for the first time will find this website comprehensive and simple. We would like to welcome those of you who are new to Indian cooking, to a world of spices and exotic recipes. Those of you who are already familiar with the art Indian cooking you will find that this website has simplified variations of the traditional favorites and much more.
Taste
Indian cooking categorizes foods into six tastes - sweet, sour, salty, spicy, bitter and astringent. A well-balanced Indian meal contains all six tastes, not always can this be accomplished. But it’s a great rule of thumb to follow. This principle explains the use of numerous spice combinations and depth of flavor in Indian recipes.
Side dishes and condiments like chutneys, curries, daals and Indian pickles contribute to and add to the overall flavor and texture of a meal and provide balance needed.
Spices
Most of the spices used in Indian cooking were chosen originally (thousands of years ago) for their medicinal qualities rather than for flavor. Many of them such as turmeric, cloves and cardamoms are very antiseptic, others like ginger, are carminative and good for the digestion. All curries are made using a wide variety of spices, and few cooks use the same quantity or variety as another. Therefore, no two curries taste the same.
Curry
Contrary to popular belief, not all Hindus are vegetarians but the majority are. Visitors to India are often amazed with the immense variety of Indian cuisine, which is not restricted to only curry. Residents of the rest of the world, however, have come to think of “curry” as simply a thick creamy yellow sauce or any dish seasoned with a “curry-powder”, whether it has a sauce or not.
An authentic Indian curry is an intricate combination of a stir-fried masala – a mixture of onion, garlic, ginger, and tomatoes; various spices and seasonings with which meat; poultry, vegetables or fish is prepared to produce a stew-type dish. Note : the word Masala also means spice.
Regional Tastes and Flavors
Each region in India has its own traditional and distinctive cuisine, which offers a wide variety to vegetarians as well as non-vegetarians. The general rule here as far as religious beliefs go, Muslims eat meat but never pork and for Hindus the cow is sacred.
There are four distinct regions in India.
North Indian Cuisine
South Indian Cuisine
Indian Cuisine from the East
Indian Cuisine from the West
