Lemon Rice is a well known recipe from Tamil Nadu. It is now liked by many people all over with its simple ingredients needs and easy to cook method. Lemon rice is can be stored for longer duration and hence it is often carried for long distance travels accompanied with pickles. It tastes good and is healthy too at the same time.

Ingredients:
2 cups Rice
2 to 4 Lemons (depending on the juice in it)
2 tbsp Peanuts
1 tsp Turmeric
2 tbsp Chana dal
1 tbsp Urad dal
10 Red chilies
5 to 7 Green chilies
2 tbsp Mustard seeds
1 tsp Jeera
1 small bunch of Curry leaves
1/2 cup Oil
Salt to taste.
Method:
  1. Cook rice and keep it aside.
  2. Heat oil in a pan, add turmeric, channa dal, urad dal, chopped green chillies, peanuts, dry red chillies, curry leaves and mustard seeds.
  3. When the mustard seeds spluter and the other ingredients turn little brown remove it from flame.
  4. Add this tempering to the cooked rice. (Note that the rice is not too hot to avoid moisturing of food).
  5. Mix well properly.
  6. Add salt as per taste.
  7. Lemon rice is ready to serve. Lemon rice can be served with pickles.

Making time: 25 minutes.

Serves: 2 persons.

Shelflife: 1 day.

Note: Dont use hot rice for preparing lemon rice. It leaves moisture. Lemon rice should be dry.
