This recipe requires Chakli maker with star nozzle . The chakli maker is avaible all over in many leading stores in different types. The above pic shows two such types with nozzles which are like flat small plate with shape holes in it. The nozzle used in this recipe is the first nozzle in yellow or pithal colour from left, called star nozzle.




Chaklis are savouries from the western states of gujrat and Maharashtra. Chaklis are made from rice flour and other flours too. In Gujrat, chaklis are prepared from Moong dal. It is spicy and looks beatiful. Here i am describing the age old method of preparing chaklis ,in the gujrati style.




Ingredients:

2 cups rice flour
1/2 cup Mung Dal paste
2 tsp oil
1/4 tsp turmeric
1/2 tsp carom seeds (ajwain) or cumin seeds
1 red chili powder (optional)
Salt To Taste

oil for frying water as required .



Method:
  1. Cook the mungdal to a paste like consistency .
  2. In a big bowl add rice flour, mungdal paste, turmeric, salt, chili powder, carom seeds or cumin seeds.
  3. Mix lightly. Heat oil and add the sizzling hot oil to the rice flour mix.
  4. Add water as needed to make a stiff dough. Knead thoroughly with hand not food processor.
  5. Take a lemon size dough and place it in a chakli mould or icing bag with star nozzle.
  6. Heat oil for frying. .
  7. Test the oil by dropping a small piece of dough and wait for 3 seconds if it does not rise to the top then oil needs to be heated.
  8. Gently make a spiral with the chakli mould or icing bag and deep fry to a golden brown.
  9. Cool moong dal chakli completely before storing in an airtight container.


Making Time: 30 minutes.

Serves: makes 20 chaklis.

Shelflife: upto 1 month if stored in airtight container.



Note: You can substitute Gram flour for moong dal.
