Mustard is immensely used in oriya recipes for grinding paste. Jahni means Ridge gourd. This is a simple cuisine with good taste from orissa.

Method:
  1. Make a masala paste by grinding mustard, cumin seeds and garlic cloves with a little water in a grinder.
  2. Wash and peel the outer skin of ridge-gourd. Cut them into small pieces.
  3. Heat oil in a frying pan.
  4. Fry the chopped onion till it becomes golden-brown.
  5. Add the vegetable pieces and stir well.
  6. Then add the masala paste and salt to it. Stir well.
  7. Cover the pan with a lid and keep it on low flame.
  8. When about ¾th of the water evaporates switch off the flame .
  9. Serve hot either with rice or parathas.

Making Time: 20 minutes.

Serves: 5 persons.

Shelflife: best fresh.

Note: Peel the skin of ridge gourd after washing and before cutting them into pieces.
