Ghuguni is a side dish from orissa. It is served with roti or rice. Its simple food and can be easily cooked by anyone.
Ingredients:
2 large Potatoes
1 1/2 cups Dried yellow peas
3 small Tomatoes
1 medium Onion
1 inch Ginger
3 Garlic cloves
2 Cardamoms (green)
1 teaspoon Cumin seeds
2 small sticks Cinnamon
3 Cloves
1 teaspoon Cumin powder
1 teaspoon Coriander powder
1 teaspoon Garam masala
2 tablespoons Coriander leaves
1/2 teaspoon Red chilli powder
4 Green chillies
1 teaspoon Turmeric powder
3 tablespoons Oil
Salt (As per taste) .
Method:
- Boil and cube the potatoes.
- Soak the peas in water for 6 hours and boil.
- Grind the onion, garlic, ginger, cinnamon, cardamom and cloves to a fine paste with water.
- Heat 2 tbsp of oil in a frying pan, add cumin seeds and fry till they start spluttering.
- Add green chillies and ground paste, fry for 2 minutes.
- Add all the masala powders, salt and chopped tomatoes.
- Saute till the tomatoes are tender.
- Add the boiled peas, potatoes and little water.
- Cover and simmer for 7 minutes.
- Serve hot with rotis. .
Making Time: 20 minutes.
Serves: 2-3 persons.
Shelflife: 1 day.
Note: Cook the vegetables till soft. The masala taste gets enhanced when it is cooked tender soft.
