Beans Poriyal is often seen is Tamil households as a side dish. It is easier and simple to prepare and doesnt need much of ingredients, thus making it preferable for many . This cuisine is healthier and nutritious too. The colour of the vegetable is retained while cooking, which makes it look good. Beans poriyal can often been seen served at traditional Tamil weddings.
Ingredients:
Beans - finely chopped-1 bowl
Onion small one finely chopped
Green chilies finely chopped -2 -3 nos
Mustard seeds 1/4 spoon
Cumin seeds 1/4 spoon
Chana dal 2 spoons
Urad dal 2 spoons
Salt - to taste
Grated coconut 1-2 spoons
Turmeric powder -1 pinch.
Oil few spoons.
Method:
- In a large non-stick pan, heat oil. Add mustard and cumin seeds. Let them splutter well.
- Add urad and chana dal and saute for a minute (dont fry urad and channa dal till brown).
- Now add chopped green chillies and onions and saute it till its soft and tender and turns little brown( dont fry too brown).
- Then add the chopped Beans and add turmeric powder and salt to it.
- Stir well and saute for a minute.
- Cover it with a lid and allow it to cook on low flame for few minutes.
- Dont add water. Cook it in its own water. It would give a better taste to the recipe.
- When it alomost cooked, remove the lid and stir them on high flame for a minute. Dont overcook on high flame to avoid changing of colour.
- Lastly garnish with grated coconut and stir for a minute on low flame .
- Remove and serve hot with rice as a side dish.
Making Time: 20 minutes.
Serves: 2 persons.
Shelflife: 1 Day( Best fresh).
Note: Dont over cook the beans to avoid change of colour. Also dont add water to it while cooking, hence use non stick pan for easier use. Add turmeric as mentioned( a pinch) to retain the original colour of vegetable.
