This Chitau pitha is offered to Lord Jagannath in Puja on Chitalagi Amabasya (also known as Chitau Amabasya). Pithas are sweets from orissa. The famous Jagannath puri Temple of Orissa is famous for its pitha offerings and prasads. Various kinds of pitha are offered to temple namely San pitha, Poda pitha etc. There are 56 sacred items which are offered to Jagannath Temple. These 56 sacred items consists of yoghurt, sweets, coconut , rice, dals etc.



Ingredients:
500 gm rice (chaula)
1 coconut (nadia)
½ tea-spoon baking powder (baking powder)
1 cup milk (khira)
1 cup sugar (chini)
8 teaspoon ghee (ghia)
6 cardamom (aleicha)
Salt to taste (luna).



Method:
  1. Soak the rice in water for about 2 to 3 hours.
  2. Grate the coconut.
  3. Grind the cardamom.
  4. Wash the rice properly and then add milk and coconut to it.
  5. Grind the mixture of rice , milk and grated coconut to form a batter.
  6. Add sugar, baking powder, cardamom powder and salt to it and thoroughly whip the same.
  7. Then keep the batter aside for 2 hours.
  8. Pre-heat the frying pan with ½ tea-spoon ghee.
  9. After the pan is heated put 2 table-spoon of batter and spread to give it the shape of a pancake.
  10. Cover the lead. Put the pan on low flame for about 2 minutes.
  11. Thereafter open the lid and take out delicious Chitau Pitha.
  12. Similarly prepare Pithas from rest of the batter.

Making Time: 25 minutes.

Serves: 4 persons. Makes 12 approximately.

Shelflife: Best Fresh.

Note: The consistency of the batter should not be very thin . It should be whiped properly too to get the pithas in form of pancakes.
